Sambar Sambar Sambar

Sambar is one of the most popular food in South India, its also gaining huge popularity all over. Sambar is my favorite. The unique flavor of the spices infused with the toovar dal gives me great flavor to satisfy my tummy :) This recipe is quick to make and easy method of preparing it. I use sambar powder to make the recipe. Sambar powder is easily available in all grocery store across India. My favourite Sambar masala powder brand is MDH. You can buy of your choice. I have used vegetables like Brinjal, Carrot, Raddish, Onion and Tomato. Sometimes i only use Lady's finger/ Okra/ Bhindi, which tastes great. You can use your choice of vegetables as well.

  1. Firstly, wash and rinse the dal in running water and soak it for 15 minutes. Soaking the dal in water reduces the cooking time.
  2. Pressure cook the dal with some salt, turmeric and 1 tsp ghee.
  3. Pressure cook the dal for 2 whistles. Add the onion and tomatoes after finely chopping them.
  4. Pressure cook for 2 more whistles.
  5. Now, add the rest of the chopped vegetables. And pressure cook for 1 whistle.
  6. By now the dal is also completely mashable.
  7. Add the sambar masala powder and tamarind paste. Add the turmeric powder and red chili as well. Add 2 cups of hot water. No need to close the lid. Just simmer the sambar for 10 more minutes.
  8. Add the salt and keep on stirring on regular interval so that the dal doesn't stick to the bottom of the pan.
  9. Now, in a small pan, heat the ghee and let the mustard seeds crackle.
  10. Add the redd chili broken, fenugreek seeds and curry leaves.
  11. Also, add the finely chopped garlic pods, or also you can crush them.
  12. Fry till the garlic turns golden brown. Time to switch off the flame.
  13. Pour the tempering into the sambar. Check the salt and the thickness of the sambar. You can add water according to your requirement.
  14. Close the lid and let it sit for 5-6 minutes.
  15. You can serve sambar hot with plain rice topped with some ghee and some papad. Delicious food!
