Lauki Ki Sabzi


Today we will learn to make the simplest version of preparing lauki and yet lip smacking. Lauki is also known as Ghiya in Hindi and bottle gourd in English. This dish can be made anytime and is a comfort food for sure. And the real taste of the recipe will come with fresh lauki’s.


  1. Firstly, wash and peel the lauki’s and cut them in cubes.
  2. Heat 2 tsp oil in a kadhai/ Pan.
  3. Add the Mustard and cumin seeds.
  4. Add the finely chopped onions, and fry them till almost golden.
  5. Add the Lauki and stir fry for 2-3 minutes on medium flame.
  6. Add the salt, turmeric, coriander powder, and ginger – garlic- chili paste.
  7. Let it simmer for 5 minutes, till the raw smell of Ginger garlic and chili paste goes away.
  8. Add the finely chopped tomatoes. If the tomato is small, you can also add some curd. It would taste great either ways.
  9. Add the garam masala.
  10. Cook till lauki’s are soft. No need to add water, as the lauki itself generates water from itself; still if it appears to be dry, then you can sprinkle little water.
  11. It’s a semi dry gravy recipe. If you want your gravy too be watery, add some hot water
  12. Garnish with finely chopped coriander leaves.
  13. It can be had with steamed rice or Phulkas/ Roti.
