GulabJamun is a favorite dessert item for many Indian folks. Especially in parties, gatherings, weddings and even in Indian thalis it happens to be that gulabjamun takes a special place in the entire menu. Soft, mouthwatering and melting gulabjamun are available in the market as ready-made instant mixes but it’s not even close to handmade gulabjamun’s taste. This recipe also steers away from using rose flavored sugar syrup for more delighting taste.   1. Mix water, sugar and crushed cardamoms together. Boil the syrup until it turns slightly sticky.
  2. Once it reaches string consistency, and then add 2 table spoons of water and mix.
  3. Add rose water and mix it again.
  4. Set it aside to keep it hot.
  5. Mix flour, milk powder and soda together uniformly.
  6. Add ghee and mix well.
  7. Mix yogurt and milk together
  8. Add 1.5 table spoons of this to flour mixture
  9. Begin to bring the flour to make a dough
  10. When dough turns sticky, grease your fingers and make a ball.
  11. Make sure the dough is not sticky and it can hold the shape well
  12. Make 12 to 14 equal size balls and heat up the pan with ghee/oil.
  13. Check if syrup is hot. If it’s not hot, heat it up a bit.
  14. When ghee is just medium hot, add the balls. Make sure oil is not very hot. Else gulabjamuns will brown without cooking well.
  15. To check the right temperature, drop a bit of dough ball into oil, it should rise slowly without changing its color.
  16. Fry balls and stir them uniformly until they turn golden brown
  17. Add them to hot sugar syrup. Allow to rest for 3 hours and serve.
  18. Garnish with pistachios for smell and flavor.
