Green Peas Paratha/ Matar Paratha

Description

This Parathas are more than yummy, made with simplest of ingredients. Basically it is made of Fresh Peas, which is easily available during winters, otherwise you can also use Frozen peas. One of the variety which i most prefer is Safal frozen peas. This Parathas can be made for breakfast , lunch or dinner, and it can be served with Aloo dum / Cholar dal. If not pickle, ketchup and curd also will taste great. If you are using frozen peas, make sure you wash and soak the frozen peas in water for minimum 15 minutes. For a healthier version, for frying the Parathas, i have used Borges extra virgin olive oil. You can also use Ghee or oil as per requirement.


Directions


  1. Boil the fresh green peas in water for 7--8 minutes, use some salt to keep the green color intact. If you are using frozen peas, no need to boil them , just soak them in water for fifteen minutes.
  2. Make a paste of the green peas, green chilli, one inch cinnamon stick, one cardomom and ginger paste.
  3. Take a pan, and heat some oil.
  4. Add the cumin seeds, one inch cinnamon stick.
  5. Add the green peas paste mixture.
  6. Roast them until dry. If the mixture is too watery, then you can use besan here.
  7. Add salt and sugar.
  8. Stir them occasionally and make sure all the moistness from the mixture goes away. Mix very well.
  9. For the Stuffed Paratha:
  10. Pinch small balls from the dough
  11. Take each dough and flatten it in between.
  12. Place one stuffing in the middle and wrap from all sides.
  13. Now, coat and dust the wheat balls in wheat flour.
  14. Roll it out in round shape approx 1/4 inch thick, and 6-7 inch diameter.
  15. Heat tawa over medium flame, and place the rolled out paratha over it.
  16. Flip and cook the parathas well from both sides.
  17. Apply some ghee/ oil on the paratha.
  18. Serve hot. The best accompaniment is aloo dum. You can have yogurt and ketchup with this.
