Carrot Poriyal/Sabzi Recipe

Description

Carrot Poriyal/Sabzi recipe can be prepared in short time and will go very well with sambar, rasam etc. This tastes absolutely delicious and very different from normal fries. Fresh carrots sauted with tempering salt and spice powders, topped generously with coconut is brilliant combination with any South Indian meal. This can be served with rice as well as for chapatti and roti items too as sabzi. Try out this simple carrot recipe, you will love it!


Directions


  1. Put 2 tea spoons of oil in a kadai and heat it. Temper with mustard, urad dal, curry leaves and dried red chillies.
  2. Add the cut carrots and sauté for 3-5 minutes to coat the oil.
  3. Add 1/3rd cup of water and let the carrots boil. Do not cover the pan while boiling.
  4. Once the water is totally absorbed, carrots are cooked and yet crunchy. Add salt, spice powder and turmeric powder.
  5. Mix it well and sauté for 5-7 minutes
  6. Add chopped coconut and mix well.
  7. Serve hot
